When we first arrived in San Miguel de Allende, the only thing I missed was good cheese. It took some time and effort, but I finally discovered several superb local artisan cheesemakers hiding in plain sight. Known as the Empress of Cheese, I've been studying the art and science of cheese for over 20 years in Canada, the US, France and in Italy and have spent the last few years exploring the culture of Mexican cheese, specifically, artisan made European style cheeses. Now I share my knowledge and the divine cheeses I've found with others. Come learn about the rich history of European influences in Mexican artisan cheese and where to buy, how to serve and pair these cheeses with drinks and condiments and how set up a French inspired cheeseboard. Alberto Aveleyra has been doing research on the site since 2017, when he presented a paper about the prehispánic routes of access to the site in the 3rd International Congress of Ethnohistory. This year, 2021, an article where he shows his first research results is going to appear in a book about the Royal Road of Guanajuato. His research proposes that this site probably is the sanctuary of Chicomoztoc, a place referred in multiple indigenous historical sources, this discovery drove him to start a PhD in Mesoamerican studies in the National University of Mexico, he is now in the selection process, if he is succesful, he´ll start his degree in August 2021. The last 4 years of fieldwork and codex analysis have been founded through the tours he runs in the site.
